The grape-picking (September)

The Harvest yield is regulated and limited each year.

Although the green light for the grape-picking starting date is given by the CIVC ( Interprofessional Committee for Champagne Wines), the vintner has also his say on the most appropriate time for harvesting. His decision is based on the good balance between the level of sugar and acidity of his parcels.
The grape-picking generally take places over 10 days, each bunch of grapes must be hand-picked and carefully transported to the press house where successive pressings are immediately carried out. .
